Vinification: Made from grapes grown on 9-10 year old vines planted 160-260ft above sea level. Cold maceration prior to fermentation in order to obtain the maximum aromatic expression of the fruit.
Food pairing: Seafood, especially oysters, fresh prawns and griddled mussels, rice dishes such as risottos and paella, pasta, cheese, and desserts featuring white-fleshed fruit and crème.
